Worms and Cousins

About a week ago, on a rather gorgeous day, we spent some time outside while Eric tilled the garden and planted some colder weather things like radishes, carrots and lettuce. They will spend some time in the little makeshift greenhouse until it warms up at night a bit more. Eric always has a great helper in Madison, when it comes to digging in the dirt.

He is teaching her how to catch worms, so she can keep them supplied with fishing bait! She held this one for about an hour and wanted to take it along on our walk:

Eric has been going down to Pella to help his brother a lot last fall and now again this spring to do some tiling and bulldozing. Once in a while the girls and I go along and spend the day with Carolyn and their boys Lucas and Trenton. Madison loves to hang out with her cousins and get some "boy play" in- we dont have snakes or semi's at our house!

Swing Set

Eric finished the swing set about a week ago, Ive just taken awhile to post it. But here they are. Nothing too fancy, just a slide and two spots for swings. I think Eric wants to stain it yet, but at least its usable now. Its been pretty cold though this past week, so Madi hasnt gotten to try it out too often, but I think that will all change this week. She loves her "treehouse" as she calls it.
Paco thought he would enjoy it too, so he thought he would try out the swing. Oops! Whats he going to do now that he is stuck?! Ha Ha, dumb dog. He's lucky Eric was home to get him free!

Coffee Time Treats

Eric and I are serving coffee at church tommorrow morning, and although not expected, it has become more common for people to bring cookies or bars for after church fellowship. I love this- as it gives me the perfect excuse to bake! I decided on two Dutch pastry-like cookies. (recipes at end of post)

(pronounced 'yawn hoggle')
I read that jan hagel loosely means "unruly mob"- gotta watch those rowdy dutch CRC guys! :)- but there is nothing unruly about this recipe as it is a fairly simple pastry. It does not involve any chilling, rolling or sticky issues, making it a perfect starter recipe if you are new to the pastry world. I have made it several times and always have success, even when I underbake it like I did this time- Oops! Still yummy and probably not even noticeable to the less critical eye. I topped mine with almonds, which are my favorite.
Krakelingen
(pronounced 'crack-lean-gen'- the g is like the e in egg, not like in gentle)
Krakelingen is definitely more challenging than jan hagel. But with a greater challenge comes greater satisfaction. Its basically a pie crust dough that you roll into snake shapes and then twist into figure 8's. I thought- pie crust?- easy! Ha, Ha- definitely more difficult and time consuming than a crust. A couple of years ago, I know I would have thrown my hands up in frustration and given up. But a certain wise husband of mine has taught me to be more patient through example and through blunt command! :) The first sewing project I worked on after we got married I was about to give up on- as was my habit. But Eric had other ideas- he told me that I was not allowed to start any other project until I finished this one! OOOh, that got my blood boiling- but even in my anger I saw that he was trying to teach me a valuable lesson long coming. Since finishing that project- with surprising satisfaction- I have been learning to give challenging jobs another try before tossing it out. And as the case was with these cookies, my hard work paid off! But do be warned, if you dont like making pie crusts or working with sticky doughs- this may not come easy to you either- but I have worked out some of the kinks for you so dont toss this one out too quickly!

Jan Hagel
1 c. butter, softened
1 c. sugar
2 c. flour
1 egg, seperated
1/2 tsp. salt
1/4 tsp. baking soda
1 tsp. almond or vanilla extract
1 c. chopped nuts
1/2 tsp. cinnamon
1 tsp. water
-Cream the butter, sugar and egg yoke
-Add the flour, baking soda, salt and flavoring and mix thoroughly
-Spread dough evenly and completely onto an 11x15 baking sheet using your fingers or the back of a spoon
-In a small bowl, whisk together the egg white and water until it is a little foamy and no longer slimy. Then spread it over the dough (I never use it all- I just give it a generous coating)
-Mix the nuts and cinnamon together and sprinkle on top of the dough
-Bake at 300 degrees for 25-30 min until just starting to brown
-Cool slightly, but cut while still warm to avoid crumbling.
-Let it cool a bit more before removing them from the pan
Krakelingen
2 c. butter, chilled and sliced into pads
1/2 c. water
4 c. flour
sugar
-Put the flour in a large bowl and cut the chilled butter into it using a pastry blender or your favorite method.
-Gradually add the water to sections of the crumbly butter/flour mixture with a fork- forming a dough similiar to pie crust. (I do my pie crusts in my mixer, so Im wondering if that would work here- if you try it let me know how it goes, as Im sure that would be much easier)
-When it starts to come together, divide it in half and working quickly, shape each one into a somewhat smooth ball.
-Cover and refrigerate overnight.
-The next day take the dough out and let it "warm up" a bit so it is easier to work with. (I tried to roll it straight out of the fridge like the original recipe said, but for me it was impossible- so I ended up rolling it out like a crust and letting it sit a while before using it.)
-Take about a Tbsp size of the dough and roll it on a lightly floured surface like a snake about 8 inches long and the size of a pencil. Pinch the ends together forming an oval and then twist it to form a figure 8.
-Dip each side into sugar. (I dipped the bottom into granulated sugar and the top into turbinado sugar- raw sugar. Next time I want to dip it in egg white before the sugar to give it some shine)
-Place on an ungreased cookie sheet and bake at 375 degrees for about 12 min. (Traditionally- if you buy them at the dutch bakery they are browned on the bottom but very pale on top. Thats the way I did mine this time- but I forgot that I learned that pale pastry is bland pastry and so I baked my end scrap pieces until the edges were browned nicely and the flavor and flakiness difference was HUGE! Lesson- dont underbake pastry!)
Taylor is 8 months old now. She learned how to crawl about a week ago and that makes her seem so grown up! She loves her new found freedom of exploring the house and her favorite spot to aim for is Madi's room. She knows where to find the toys!
Today Eric worked on building a swing set for the girls. Madi is helping him by sweeping up the saw dust. Last year Madi would stand by the fence and look wantingly at the neighbors swings, so I am sure she will be happy to have one of her own now.

Move over sugar bowl!

Cute, right? Way more fun than a sugar bowl, or even cubes. Perfect for when you want to add that special touch when serving guests coffee. I saw this idea in a Martha Stewart magazine and thought I would try it. She did hers in flower candy molds, which were super adorable, but my heart molds turned out pretty cute too. Next time you make coffee for someone, but a little love in it! :) I know- cheesy!
How to:
Mix one cup of sugar with two teaspoons of water until the consistency of wet sand. Press firmly into candy molds, scrape away excess sugar and then flip out onto wax paper. Let dry overnight. (I did mine one at a time because on my first try, I flipped over the tray of molds and they all crumbled [maybe I just didnt press firmly enough]. I also think they would be super great tinted with food coloring.)

Spring Fever!

Yesterday and today were such gorgeous, sunny and warm days! We just had to be outside- taking walks and playing at the park! Yesterday we drove to DesMoines and went to the zoo. Madison loved all the animals and I think both girls just loved being outside and seeing all the other kids and activity. What a fun day!




Eric bought a fishing boat!! Eric took it out for a test run this afternoon, and Madi and I can't wait for another warm day when we can go for a ride! Madison is sure she will catch just as many fish this summer as Eric. Looks like competition! I will keep you posted on who gets the biggest one! :) Looks like we will have a summer full of fresh fish! Yum!

Lemon Curd Tarts

So I have been reading a couple of food blogs lately and am really enjoying them. My favorite right now is www.smittenkitchen.com She is very interesting to read and her pictures make me want to jump in the computer and eat. Plus her recipes all appear rather simple and dont use strange ingredients. So I have been re-inspired to do some creating of my own. Ive always loved baking and I love to research recipes and I dont settle until I have a recipe that is great, not just good. So my latest quest is a tart. (I just bought a tart pan and am waiting for it to come in the mail.)
This past weekend our church held our annual chili cook-off and pie auction. I made an apple pie and some mini shortbread tarts with lemon curd and raspberries. I made too much lemon curd because I was paranoid that one batch wouldnt be enough (I didnt even use one whole batch). So now we get to finish off the leftovers. Yum! I decided to try a different tart recipe this time-one derived from smitten kitchen (with my own twists thrown in). Its the only traditional tart recipe I have ever made, so I dont have much to compare it to, but it was pretty great! Flaky and oh, so yummy! I was going to include the recipe, but its really long, and I guess Im frankly just too lazy to type it all out if Im not even sure anybody cares to have it! But if you do want it, please let me know and I will surely share it! (sorry Janelle- I know you are going to cringe at my photography! :)
The dough was really simple to roll out and work with. I think the trick to flakiness is to make sure you have butter flakes throughout the dough-meaning-dont over mix!:

Mmm...Perfection! Ok, maybe not, but it sure was tasty! It just needed a little berry on top to finish it off!:


So I thought it would be funny to let Taylor try some of the lemon curd. So good, but so sour! I know Im such a nice mom, right?! Always sharing with my daughters.

Well, apparently the joke is on me, she didnt even flinch! And wasnt satisfied with just one taste! Mmm... :
